Homemade Carbonara Sauce by Janice Goh
Ingredients:
1 medium size potato, peeled and chopped into cubes
1 red onion
1 cup (250ml) vegetable - zucchini (Note 2), cauliflower
1 cup (250ml) milk (FM or BM)
1 pinch of mixed herbs (Note 3)
1 tbsp grapeseed oil / VCO
Black pepper
Method:
1. Wrap all the ingredients in aluminium foil. Season with black pepper and mix herbs.
2. Wrap up. Bake in preheated oven at 170C for about 45 minutes or until potato is soft to mash.
3. Let cool and blend with milk.
4. Serve with pasta.
5. Optional - serve with cheese
Notes:
1. You may steam instead of baking the ingredients. Reduce the milk to 50ml.
2. Photo of zucchini - can get in hypermarkets / Jaya Grocer. Yellow ones has more seed and buttery taste. Skin can remain unpeeled.
