Nutella Orange Yogurt Muffins by Jenny Puah

Ingredients:
125g unsalted butter
90g white fine sugar
1tbsp heap Nutella jam
2 whole eggs (grade A)
175g cake flour
1tsp baking powder
1/2tsp baking soda
1/4tsp salt (optional)
3 orange pulps
70g plain yogurt
1tsp orange zest (optional)

Method:
1. Preheat oven 160 for 20mins.
2. Melt butter, leave aside let cool for 3min, mix orange pulps with yogurt leave a side for later use.
3. Pour sugar and scoop nutella in melted butter, hand whisk for 20 circulations.
4. Crack one egg in, hand whisk rigorously till just combine, crack in another one do the same till combined.
5. Sieve in flour (with baking powder, salt and baking soda), use spatula to fold in, half way through, pour orange pulps and yogurt mixture and zest, use spatula to fold till batter is just combined.
6. Spoon batter to liners 90% full, put some chocolate chips on top or other as desire.
7. Bake for 15-18 mins or till skewer inserted comes out clean.
