Organic Raisin Cream Cheese Cupcakes by Vivi Yong

Ingredients:
Cake Flour/ Low Protein Flour 80g
2 Eggs
Raisin 60g
Cream Cheese 120g
Baking powder 3g
Sugar 50g (too sweet, suggest lesser than this)
Unsalted butter 50g

Method:
1. Beat unsalted butter with sugar until sugar dissolved. Add in cream cheese and mix well.
2. Add in the eggs one by one and mix well.
3. Add in sifted cake flour and baking powder. Mix well.
4. Add in raisin.
5. Pour the batter to the cupcake liner till 80% full.
6. Decorate with raisin on top.
7. Bake at 180C for 15-20 mins.
8. Ready to serve!
