Pumpkin Chicken Rice by Kennis Lim






































Method:
1) Dice a small size yellow onion and some chopped garlic...fry till fragrant with unsalted butter.
2) put in small cube pumpkin (the amt. depends on your liking)
3) cube 1 big boneless drumstick (with the thigh part) and marinate with a bit of pepper & seasoning sauce, coat it thinly with some corn flour. Add into the pan and continue to stir fry, add in a bit of water.
4) when the meat is around 50% cooked removed from heat. Put on top of the rice and cook as normal like how you boil your rice. 
I cook with 1 cup of rice with 1 big drumstick
