Steam Cheddar Cheese Cake by Suzanne Eng

Ingredients A:
4 slices Cheddar cheese slices
80g butter
125g milk

Ingredients B:
3 eggs (Grade A)
100g caster sugar

Ingredient C:
210g self-raising flour

Ingredients D:
1 tablespoon cocoa powder
Handful of raisins

Method:
1. Cook Ingredients A over low heat until dissolved (no need to boil), set aside.

2. Beat Ingredients B at high speed until thick.

3. Combine (1) and (2), sift Ingredient C gradually (divide into 3 - 4 times) into mixture until well combined.

4. Scoop out some of the batter about 3-4 tablespoon in a separate small bowl. Add cocoa powder and mix thoroughly. You can choose to skip this step - it will be plain / original muffin.

5. Scoop plain batter into the mould. Then scoop some cocoa batter. Use a needle/stick to make marble pattern. Sprinkle with raisin. (skip this step if you are making plain / original muffin)

6. Steam for 15 minutes.
