Steam Orange Cupcake by Jenny Wong

Ingredients:
250gm self raising flour
100gm fine sugar
1 large egg
50gm unsalted butter (melted and leave to cool)
210gm fresh squeeze Orange juice
40gm water
1tbsp Orange zest
60gm thinly strips of orange peel (scrap out the white membranes before cutting)
1 drop Orange colouring (optional)

Method:
1- Heat up steamer. In a metal bowl, combine orange juice, water, sugar and colouring. Heat it up in the steamer. Stir until sugar dissolved and leave to cool. Do not boil the orange juice or you'll end up with bitter taste after. 
2- sieve flour into a mixing bowl. Pour the orange juice into the flour, followed by egg and melted butter. Stir well with hand whisk till evenly mixed. 
3- add in orange peels and orange zest, fold well with rubber spatula. 
4- divide batter evenly into cupcake liners/silicone mould to 3/4 full. Use a knife 'cut' the batter top for the smiling effect. 
5-steam at high heat for 12 minutes.
