Gratin Bread by Casey CY
Ingredients:
150 g bread
25 g heavy cream
25 g low protein flour / cake flour
¼ onion
150 g shrimp (WWH: I substituted it with tilapia loin)
50 g ham (WWH: I substituted it with Sweet Chinese sausage & baby bella mushroom)
350 cc milk
150 g cheese – in strips (WWH: I used Cheddar cheese, Swiss cheese, American yellow cheese and Mozzarella string cheese – I used knife to cut them into tiny strips)
To marinate:
1 teaspoon rice wine
¼ teaspoon salt
Seasoning:
1/3 teaspoon salt
¼ teaspoon black pepper
Garnish:
Dried parsley
Method:
1. Cut the bread into cubes. Spread evenly on the pan. Bake it at 150°C / 300°F for 7 to 8 minutes. Once the bread is done, take it out and put it aside.
2. Clean and rinse the shrimps, marinate it with 1 teaspoon rice wine and ¼ teaspoon salt.
3. Coarse chop the onion and cut the ham into cubes.
4. With medium heat, add in heavy cream and onion, cook for about 4 to 5 minutes.
5. Then add in low protein flour and mix well.
6. Gradually add in milk (about 4 to 5 times), mix well the mixture until creamy each time you add in the milk.
7. With this order, add in ham, seasoning and then shrimps.
8. With low heat, cook the shrimps until they are done.
9. Finally, add in baked bread cubes and mix well with the creamy mixture.
10. Preheat the oven to 200°C / 395°F
11. Pour the mixture into the baking pan, add cheese evenly onto it.
12. Bake it for about 10-12 minutes or until cheese turns to golden brown color.
13. Once it is done, garnish with some dried parsley and serve.
