Sambal ikan bilis recipe
2 stalk Lemongrass, white part only
Ard 10 shallots
Ard 10 garlic
ginger
4 red chillies
5 dried chillies - trim stems, cut 2 cm long, soak in warm water till soft, about 30 minutes; squeeze dry and discard water
15g belacan roast at 150°C or dry-fry over medium-low heat till dry and crumbly
Method:
1. Pound all the above till smooth.
2. Stir fry 1 finely sliced onion and some garlic with oil till fragrance. Then add in the pound sambal. Continue stir fry till fragrant. Lastly add in fried anchovy. Amount as desire.
Turmeric fried chicken recipe
Marinate drumstick or chicken with turmeric, salt, pepper, sugar and soya sauce. Fry.
