Steam Moist Chocolate Cake by Louis Ho



Ingredients:
180g butter
200g caster sugar
200g evaporated milk
2 eggs, slightly beaten with fork
100g plain flour
50g cocoa powder
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp vanilla essence

Method:
1. Sift the flour, cocoa powder, baking powder & baking soda in a large mixing bowl. Set aside.
2. Combine caster sugar, evaporated milk, vanilla essence & butter in a saucepan. 
3. Stir over low heat until sugar dissolved & butter is melted, turn off fire & keep warm. 
4. Heat up the steamer. 
5. Add in beaten eggs into the slightly cold evaporated mixture & stir till well mix. 
6. Pour the mixture into the flour & stir till well mix. 
7. Pour the batter into a greased pan & placed it in a steamer.
8. Cover the top of the pan loosely with aluminium foil. 
9. Cover the steamer & steam over medium heat for 45 minutes. 
10. Cool the cake before turning out for decoration. 

Chocolate Fudge Topping
Ingredients:
200g condensed milk
2 tbsp corn oil
1/2 tsp vanilla essence
20g cocoa powder, sifted
A pinch of salt

Method: 
1. Combine the sifted cocoa powder, condense milk & corn oil. 
2. Stir over low heat till thicken. 
3. Add in salt & vanilla essence. 
4. Cool the chocolate topping a little before spreading on the cake. 
5. Refrigerate for at least 3 hours so that the cake is firm enough for clean cut before serve.
