Banana Cranberry Oat Muffins by Vivi Yong




























Ingredients:
*1/2 cup VCO (virgin coconut oil)
*2-3 very ripe bananas, chopped or mashed into small pieces 
*2 cups oat flour (may use ready organic oat flour or grind rolled oats into fine powder)
*1.5tsp Baking Powder (I used natural Baking Powder bought from the organic shop) 
*1/2 cup milk (fresh milk/ formula milk/ soy milk - your choice) 
*1tsp cinnamon 
*Less than 1/2 tsp salt 
*1 cup dried cranberry

Method:
1. Mix together the dry ingredients ie oat flour, baking powder, cinnamon, salt. 
2. In a separate bowl, stir together VCO and milk. Gently fold in chopped/mashed bananas. Add into the dry ingredients. Gently stir in cranberry. 
3. Topping: sprinkle 1/2 tsp of rolled oat on top (optional). 
4. Bake at 175deg C for 25-30min.
