Steamed Organic Corn & Cheese Muffin by Vivi Yong





































Ingredients:
200g Flour
100g Corn + Cheese, steam the corn, then blend with shredded cheddar cheese
50g Brown Sugar (may replace with 50g apple, steam & mashed)
30g VCO
2 Eggs
2 1/2tsp Baking powder
A pinch of salt
100g Milk

Method:
1. Preheat the steamer.
2. In a large bowl, mix together sifted flour, baking powder & salt. Set aside.
3. Beat the eggs + sugar until foamy.
4. Add in VCO, Milk & blended corn+cheese, continue beating until well mixed.
5. Add dry ingredients and mix well.
6. Fill muffin batter into a cupcake liner about 80% full.
7. Steam for 15min.
