Nutella Muffins by Agnes Tan
Makes about 6 muffins
Ingredients:
62g cake flour (add 1/4 tsp baking powder) or self-raising flour (no need baking powder)
285g Nutella
2 tbsp canola oil, olive oil or melted butter (I used olive oil)
2 eggs
2 tbsp yogurt (I replaced with milk)
2 tbsp condensed milk (I omitted)
Chocolate chips or nuts etc for topping (optional)
Method:
1. Hand whisk Nutella, oil, eggs, yogurt and condensed milk.
2. Sift in flour & hand whisk till well blended. Taking care not to over whisk.
3. Fill muffin cups 3/4 full & bake at 180C for 15 - 20 mins.
Tips:
1. Bake at middle rack otherwise the muffins will burn.
2. Toothpick will be stuck with gooey bits and that's when it's ok. Anything longer will be too dry.
