Pesto Pasta by Chin Pei Ng


Pesto Sauce
Ingredients: 
Sweet basil - 30g
Olive oil - 1/4 cup
Pine nuts - 40g
Garlic - 2 small cloves
Salt - 1/4 tsp
Parmesan cheese - 30g
Preferred pasta

Method:
1. Toast pine nuts for 1 mins.
2. Blend pine nuts, garlic and salt until fine.
3. Put in sweet basil then add olive oil as it blend. Stop adding olive oil when you get a smooth texture. Add Parmesan cheese and blend to combine.
4. Store in airtight container in fridge for up to 1-2 weeks.


Pesto pasta
1. Cook pasta according to instruction, set aside.
2. Stir some hot water from the pasta cooking water into the sauce. 
2. Pour the sauce over the pasta, sprinkle more Parmesan if desired and serve!

Squid Ink Pasta by Jaymee Chan




Ingredients:
1 cup of unbleached flour, some extra for dusting/adjust the dough if too soft
2 medium eggs - i add one first then another one only use half
4 squid ink - need to burst it in the eggs or else the ink will be on your hands (Bought squid from Jaya Grocer and requested to separate the ink)

Method:
1. Mix the ink with the egg together then pour into the well in the center of unbleached flour. Add a pinch of salt (optional). 
2. Use a chopstick to stir the dough until come together then put 1 tablespoon of olive oil to rub hands while kneading to prevent stickiness (no need to use truffle olive oil, better to add to coat pasta after cook to impart more flavour) 
3. Knead until smooth and elastic. Then cling wrap and rest for more than 30 mins. Dust worktop and hand with flour, knead/press a bit then put the widest setting in noodle maker, roll then fold like envelope, repeat a few times until smooth, then slowly roll down the setting one by one without skipping until your desired thickness is achieved. Dust some flour in between if sticky. Then cut it/shape as you like. Put in rack to dry a bit before cooking. Cook like normal pasta but monitor coz cooking time differ with thickness. Rinse with cool water, coat with olive oil and keep aside to cook the sauce.

Spaghetti Carbonara by Yvonne Shee


Whisk 250ml cream + 3 egg yolk and set aside, stir fry ham/bacon/mushroom till fragrant, add in 3 cloves of sliced garlic and fry for 1 min, add in spagetti (al dente) and mix well, add in cream, add water depending on how thick you want your sauce to be. Lastly add cheese (I used 2 pcs of cheddar cheese)

Pan Grilled Marinara Black Squid Ink Spaghetti by Anna Ng


Pan grilled the fish and prawn.
Spaghetti bought from BIG Publika.

Spaghetti sauce recipe:
1. Chopd garlic and onion. Sauteed till fragnant.
2. Add in diced fresh tomato.
3. Add in water. Add in a can tomato puree. Simmer till soft.
4. Add in sea salt and black pepper. Optio- add some ketchup.
5. Serve with broccoli and toasted bread.

Salmon Aglio Olio Spaghetti by Jaimy Chan


Stir fry 1 tablespoon of chopped garlic with 1-2 tablespoon of olive oil until fragrant, add in 6 sliced porto bello mushrooms, almost one box of honey cherry tomato cut into half, add in preboiled spaghetti, chopped basil (about 1/2 pack), black peppercorn, some salt. can serve as it is or with panfry salmon.

Noodle / Pasta Ideas by Janice Toh


Saute garlic, onions, mushrooms then put the flame up high to flash fry the pork, then add cherry tomatoes and a quarter can of diced can tomatoes and a tablespoon and a half of red pesto (store bought though I am sure you can make it) and some whole milk. A dash of pepper and italian herbs.



Stir fried soba noodles with garlic, onions, green beans, carrots, peas, corn and bacon with dashes of soy sauce and mirin


Cod in creamy green pesto sauce and brussel sprouts served with spaghetti

1. Season cod in salt and pepper and garlic powder.
2. Quarter brussel sprouts and blanch. Strain and add some butter. 
3. Boil water, then add spaghetti. 
4. Sweat some onions in olive oil on medium high heat and sear cod fish, 2 mins each side then add 1/4 cup water and turn heat down to medium. Add 2-3 tbsp of green pesto to taste. Put in the brussel sprouts when fish is opaque, add a dash of whole milk or if you prefer, some cream. Season with pepper.

Baked Pasta with Vege by Angie Low


Ingredients:
75g baby pasta
Vege (e.g.,chopped broccoli, cauliflower, mushroom, zucchini, carrots)
20g butter
20g all purpose flour
200 ml milk
Garlic & onion (can be omitted)
Cheddar cheese or parmesan cheese
Chopped tomato
Salt and pepper

Method:
1) Put about 75g of baby pasta into lightly salted boiling water.
2) After the pasta has boiled for sometime, add vege into the boiling water. (I added cauliflower, mushroom and shredded zucchini). Remember to add the vege at a time when the pasta and vege will be done at the same time. For example, if it takes 10 minutes to cook the pasta and 4 minutes to cook cauliflower, then add cauliflower after 6 minutes. 
3) In a separate sauce pan, add 20g of butter, wait for it to melt. Season with salt and pepper. (Go easy with the salt since will be adding cheese later and cheese can be quite salty). Add garlic and onion (can omit if baby do not like). 
4) Then stir in 20g of flour. Whisk in around 200ml of milk until cooked then off the heat and add 50g of shredded cheddar cheese or parmesan cheese. 
5) Mix the drained pasta and vege with the pasta sauce. Stir in some chopped tomato and pour the mixture into baking dish. 
6) Add more cheese on top.
7) Grill in the oven for 4-5 minutes.

Cheesy Minced Meat Cherry Tomatoes Alphabet Pasta by Grace NgWt


You can substitute with Heinz baby pasta and other minced meat as well.

Ingredients:
5-6 big Cherry Tomatoes, diced
Enough portion of minced (pork) meat, marinated with a teaspoon of low salt jap shoyu, dash of pepper, dried thyme herbs & corn flour
Dried anchovies, about 5pcs washed
Chopped garlic
Grated block cheddar/a slice of cheddar
5 tbsp of Alphabet Pasta
Shredded lettuce

Method:
1. Bring pasta to boil until soft . Drain & put aside.
2. With a tspn cooking oil, lightly fry garlic & anchovies till fragrant. Add in cherry tomatoes & minced meat, mash them up while frying.
3. Add some water, simmer a while. Put in shredded lettuce before turning off fire.
4. Pour cooked meat on top of the pasta & top with grated cheese.

Pasta / Noodles Ideas by Mummy Love Jayna

Spaghetti with bolognese sauce (salmon) and vegetables
Steam carrot, celery and tomato using avent steamer. Last 7 min add salmon and 1/2 tspn tomato paste. Blend and pour on top of cooked spaghetti. 


Steam pumpkin, cauliflower and one white button mushroom. Add some ABC soup until desired consistency. Pour on top of hot macaroni. Add some grated cheese.

Cauliflower and white button mushroom, steam and blend. Add grated cheese, milk and black pepper.

Soup using red and white radish soup with poached kampung egg

Use 6g konbu and 1/2 small packet bonito flakes to make the soup. Sauté garlic, add grated sweet potato and zucchini, cherry tomato and pre boiled 1.5 brown rice Mee suah, sesame oil.

Gammon, Cherry Tomatoes & Peas Fusili by Kathy Lim-Small


Ingredients:
Gammon, ham or lean bacon (unsmoked)
Chopped garlic
Frozen peas
Cherry tomatoes
Thyme
Black ground pepper
Cooked pasta of your choice
Olive oil

Method:
1. Heat a little oil in a pot, big enough for your pasta too.
2. Sauté the garlic and add in meat and herbs and stir well in medium heat.
3. When meat is half way cooked throw in peas and tomato.
4. The juice from the meat will release and because they are salty so adding cherry tomatoes will balance up with the sweetness and no salt or other seasoning is needed.
5. Add in cooked pasta stir well and add some ground pepper or chilli flakes as desired.
6. When pasta is well coated with all the juice, turn off heat and serve.

Beef Aglio Olio Spaghetti by Jaimy Chan


Method:
Fry garlic with 1 tablespoon of olive oil until fragrant. Add mushroom and black pepper, stir fry for a while then add beef (marinated with sesame oil & pepper), precooked spaghetti (toss the drained spaghetti in olive oil after boiling & run thru cold water), stir. Add tomato and lastly basil leaves and a little salt.

Vegetable Stew with Pasta by Christine Kia


Method:
1. Sautéed garlic and brown onion
2. Add diced carrots and potato
3. Add just enough water to cover
4. Bring to a boil
5. Add diced tomatoes and zucchini
6. Simmer until soft
7. Cook pasta separate and pour sauce over pasta.

Baby Angel Hair Spaghetti Bolognese by Diana Lim Li Yen


Ingredients:
- 3 tbsp minced chicken marinated with tiny bit of pepper
- Leftover English roast ham cut up
- 1 medium sized yellow onion, diced
- 1 clove of garlic, grated
- 2 roma tomatoes, chopped up roughly
- 1/4 tsp each of dried basil, oregano, rosemary & thyme
- A tiny sprinkle of sugar or rock salt (if your LO is old enough - to adjust sweetness/sourness from tomatoes)
- Tiny squeeze of lemon
- 1/2 small red apple, cubed same size as onions
- Sprinkle of grated cheese
- A crack or two of black pepper
- Tiny splashes of water
- 1.5 tsp oil (I used vco) & 1/4 tsp unsalted butter

Method:
1. Heat oil & butter in pan over medium-small fire. Once butter melts, throw in diced onions & saute till soft then add in grated garlic & saute till fragrant. 
2. Add in minced chicken & stir-fry till no longer pink. Break it up with your ladle. Next, add in ham & the oregano, rosemary & thyme then add apples & a splash of water & saute till softer. Mix well. 
3. Add the tomatoes & basil & cook till tomatoes are soft and release their juices. Add 3-4 splashes of water (about 1/4 cup) & let tomatoes & the other ingredients simmer. Stir every now & then. 
4. Once a thicker gravy is formed, taste & see if your sauce requires sugar/rock salt (it will need very little, if at all!). 
5. Lastly, squeeze a tiny bit of lemon juice into gravy & stir. Turn off the heat & serve on top of cooked angel hair spaghetti with a sprinkle of cheese on top.

Baked Macaroni by Lin Sue


Cook the pasta first.

Ingredients A
1 chicken drumstick cut into bite pieces
4 button white mushrooms (cut)
1 onion (cut into small pieces)
Some carrots (cut into small pieces)
1 tbsp olive oil

Ingredients B
1 tbsp flour
1 tbsp butter
¼ cup milk
1 egg, optional
Some Mozzarella cheese

Method:
1.Stir fry ingredients A and then set aside to cool.
2.Pre-heat the oven at 180C.
3.Use a pan, melt the butter then add in the flour. Mix it well.
4.Then pour in the milk and whisk it into a batter.
5.In a bowl, mix the cooked pasta and cooked ingredients A.
6.Add in the batter, mix and pour into the oven baked dish.
7.Top in the cheese, and bake for 15 minutes or till the cheese melt and golden colour!

Macaroni & Cheese by Tan Boon Yen


Method: 
1. Place boiled macaroni and potato slices into bakeware. Drain off all liquid.
2. Arrange the steamed carrots on top.
3. Arrange chicken slices or minced chicken (uncooked) next.
4. Then arrange the sliced brown button mushrooms (uncooked) on top of the chicken.
5. Spread some pasta cream sauce on top . I used the Prego Cheesy Alfredo cream sauce.
6. Cover completely with thick layer of mozzarella cheese.
7. Bake in airfryer for 15 mins at 160°c.

Mine turned out soupy at the base, cos I didn't drain off the liquid at step 1. The top layer up to the chicken was delicious, but the macaroni and potatoes were a little bit bland. But it was just right for my 2yo. For my 7yo, I filled his plate with the soup/gravy at the base for more taste.


Spaghetti with Tomato Sauce by Serene Khoo


Ingredients:
6-7 large fresh tomatoes, peeled and seeded
¼ cup olive oil
3 medium onions, diced
8 cloves of fresh garlic (or more to taste), finely minced
¼ cup fresh basil leaves, finely chopped
½ tsp dried thyme leaves
1 tsp dried oregano
1 tsp dried parsley
1 tsp sea salt
1 carrot (1/2 should be grated and added to sauce, the other half should be added at the end of cooking and then removed)
1 tbsp honey

Method:
1. Pour the olive oil into a large stockpot at medium heat.
2. Add diced onions, garlic and grated carrots and saute for 6-8 minutes or until onions are translucent and tender.
3. Add tomatoes, chopped basil leaves, oregano, thyme bay leaves, parsley and sea salt. Simmer on low heat for 2-3 hours or until cooked down and starting to darken.
4. Add carrot piece for the last 30 minutes to absorb acidity.
5. Use blender to puree sauce until smooth (for a thicker sauce, you may like to skip this step.)

Fried Tuna Macaroni by Nia Sulaiman

Method:
Blend onion, tomatoes, green chilli and garlic. Then tumis until fragrant and pecah minyak or agak kering. Kacau kacau so that tak hangit. Put in tomato sauce, kacau lagi, add salt, gula melaka or you can put sugar or don't need any. Kacau again. Then add tuna, mix well, add cooked pasta and mix again. Lastly add several cheese slices and mix until cheese melts. You can opt for grated cheese.
