Meat Floss (Breadmaker) by Laihoong Wong
Ingredients:
Lean meat from my soup.
Sugar
Soy sauce
Garlic powder
Method:
1) Shred the lean meat.
2) Add seasoning & mix well.
3) Put everything in breadmaker (Tesco) & select the 'Jam' function. For 1st round, stopped the machine at 20 mins and then run the 'Jam' function for second round in full.
Homemade Crackers by Lim Soo Sean
Makes 2 trays (picture is 1 tray)
Ingredients:
Fresh Milk 80g
Oil 30g
Low Protein Flour 150g
Yeast 1/4tsp
Baking soda 1/8tsp
Salt 1/8-1/4tsp
Green onion 3-5tbsp (cut into very thin slices)
Instructions:
1. Put everything together, mix well.
2. Add in green onion and knead until smooth.
3. Set aside and let it rest for 15 minutes
4. Roll into 2mm thickness.
5. Cut into small pieces and use fork to make hole on it.
6. Bake at preheated oven 170’c until slightly golden color.
7. Best with a cup of coffee cos it is a Chinese version of biscotti.
Muffin Tin Pancake with Fruits by Anna Ng
Ingredients:
1 cup of flour
1/4 cup sugar
1/2 cup melted butter
1/2 cup milk
2 teaspoon baking powder
1 teaspoon vanilla
1 large egg
Fruits of your choice
Method:
Mix all ingredients well and bake in preheated oven at 160°c for 20 mins.

Mantou with Hoisin Minced Chicken and Vegetable by Sunny Wong
Method:
Mix plain flour, honey, baking powder and full cream milk to a thick batter consistency. Then scoop into silicone cupcakes trays (3/4 full). Microwave on high heat for 1.30sec.
Filling ingredients- Minced chicken, garlic, carrot, silverbeet and Sunny's bbq sauce (hoisin sauce, fresh ground pepper, tomato sauce, soy, oyster sauce and honey).
Once the work is hot add chicken and cook till light brown. Then add balance vegetables and Sunny's bbq sauce. Can add cornstarch + water to thicken.

Homemade Lotus Paste with Pumpkin Seeds Mooncake by Jenny Yennee

Ingredients
*Traditional skin dough
*Filling - Lotus seeds paste + pumpkin seeds
*Utensil needed - small size mooncake mould ( 63g )
*filling 35g, skin dough 28g*
- Medium size mooncake mould ( 125g )
*filling 75g, skin dough 50g*
Method
Scale skin dough at 50g for medium mould, 28g for small mould. Flatten skin dough, wrap in filling ( small mould 35g, medium mould 75g). Repeat process. Dust mooncake mould with some flour, tap out excess flour. Place in a piece of mooncakes, press lightly. Arrange on a baking tray lined with greaseproof paper. Rest for 15mins. Bake in preheated oven at 180c for 10mins. Remove, rest 10mins. Then glaze surfaces and rebake once more till surface appear golden looking. Remove and cool. Do not serve immediately. Mooncakes need between 2-3days to soften and allow the oil to penetrate through the skin.
*Traditional Mooncake Skin Recipe
Ingredients
250g sugar syrup **
300g unbleached cake flour
70ml Sunflower Oil
1/2tsp alkaline water
Method
Use a large bowl, mix the sugar syrup, alkaline water and sunflower oil well. Sift in the flour. Use a spatula to combine all ingredients. Don’t over-stir. Knead into a dough. Cover with a film wrap and rest for 30mins.
**Homemade Sugar Syrup Recipe
Ingredients
1kg brown sugar
700ml water
4 slice fresh lemon
Method
Bring a water to boil, then Pour brown sugar and lemon sluces into a large saucepan. On low heat boil for 1hr - 1 1/2hr until thick. Cool and pour into sterilised jars or bottles, store in a cool place.
*Homemade Lotus Seeds Paste * first attempt * Recipe
Ingredients
500g lotus seed
350g brown sugar
250g sunflower oil
2tbsp maltose
Method
Rinse lotus seeds, soak for at keast 4hrs. Rinse and put into a pot of water. Bring to boil for about 1hr or till lotus seeds have softened. Strain and blend into paste. Heat some oil in a wok, add in sugar at medium heat, continue to fry until turns to light brown, change to low heat. Add in lotus seed paste, fry for a while, pour in oil in several times and keep stirring until it turns almost dry. Lastly add in maltose, keep stirring until it turns brown and does not stick to wok.

Homemade Chinese Chicken Dumplings with Balsamic Vinegar by Jenny Yennee
Dumplings skin
Ingredients
300g unbleached plain flour
150ml warm water
1/4 tsp salt
Method:
1. Mix all ingredients into mixing bowl, knead until smooth dough. Set aside, rest for about 1hour.
2. Roll the dough to form a long strip, divide the dough into 25- 30g each.
3. Flatten the dough, wrap in the fllings and mould it into plum blossom shape / dumpling shape.
4. Steam for 8-10mins.
5. Served the hot dumplings with dipping sauce~ balsamic vinegar.
300g mince chicken drumstick + chicken breast
Chinese cabbage
Corianders
Scallions
1pc Red onion
2-3 slices Ginger
Seasonings
Sesame oil
Pepper
Light soy sauce
Salt
Huadiao wine
Method :
1.Combine minced chicken filling with all the seasonings and mix well. Marinate for at least 30 mins.

Okonomiyaki by Ong Lee Sum
Method:
1. Heat leeks and cabbage with some oil, salt and pepper till soft. Keep aside to cool.
2. Add in an egg when cooked cabbage and leeks is somewhat cool.
3. Oil the pan a bit and place the mixture in, shape and flip to cook both sides and slide it onto the plate when done
4. top with Kewpie mayonnaise, Okonomiyaki sauce and fish flakes.
Okonomiyaki Sauce, if you don't have this, substitute with a sauce made of 1:1 tomato ketchup and Wocerstershire Sauce. However I couldn't get Worcestershire Sauce so I used BBQ Sauce instead.

Fish Paste Tau Kee (Beancurd) by Mary Koh
Method:
Fish Paste : Mix all in a bowl:
Dodo fish paste 1 pkt (appx 180g)
4-5 table spoon of plain flour
1-2 eggs
Black & white pepper
Shaoxing wine
Sesame oil
A bit of garlic, ginger, onion, spring onion
Minced prawns (optional)
The Tau kee (dried beancurd) is bought from the dry goods wholesales opposite guan yin temple. It comes in a transparent bag, no name or label, all nicely cut up. You do not need to "treat it"!
Put a teaspoon of fish paste mixture in the center of the tau kee skin, fold and gently use both hand to "flatten" the tau kee.
Deep fry or air fry. I use the former.
Notes:
* I didnt put a lot of mix per pcs coz I like it more crispy.
* You can get this tau kee skin from the supermarket, not tat I know of
* I didn't buy Bobo paste coz its too saltish, this Dodo brand is still saltish but its still acceptable.
* You can buy your own fish paste from wet market, its healthier.
* You can replace fish paste with minced chicken, minced pork just like wanton filling. You can even dice up all sorts of mushroom, sautee with butter!
* I freezed the balance 28 pieces. It can last 3-4 weeks.

Tortilla Chips, Wraps and Guacamole Dip by Marilyn Wong
Recipe for tortilla wrap:
400g plain flour
1 tablespoon unsalted butter
1 teaspooon baking powder
1/8 teaspoon of salt
175ml warm milk (agak-agak)
Method:
1. Rub the butter into the flour and baking powder mix.
2. Warm milk together with salt.
3. After butter is rubbed into the flour, slowly add the warm milk to the mixture and knead.
4. Keep adding milk until become soft dough (this is why I cant give exact milk amount because I stopped once the dough turns soft).
5. Put in mixing bowl and cover with towel for 10mins (the recipe says to oil it first but since there's butter in the dough already, mine do not need oiling).
6. After 10mins, divide into golf ball size and roll to the thickness you want (I made smaller balls, hence the smaller wrap size).
7. Cook in non stick pan without oil, whenever there is bubble forming (like picture2, you can flip to the other side).
Method for tortilla chips:
1. Preheat oven to 150C.
2. Use scissors and cut to the size you want.
3. Pop them in for 5/6 mins and then take out and flip them. (the recipe calls to drizzle salt at this point before flipping and popping into oven again, but I forego this step as this is for kids. For adult version you might want to do this).
4. After flip, pop them in again for another 5/6 mins (until slightly browned).
5. Take them out to cool.
Recipe for guacamole dip:
2 ripe avocados (it yields when you press lightly)
1/3 lemon (juiced)
1 tomatoes
half and onion (chopped)
Method:
1. Scoop the avocados into a bowl and mashed them up.
2. Add the lemon juice (please adjust the lemon juice as you go. Depends on how sour you would like it to be)
3. Add onions and chopped tomatoes (tomatoes should be added before serving as it will make the dip watery. to avoid this I removed the seeds).

Steam Cheese Cake and Sausage Snail by Fiona Low

Ingredients for Cheese Cake:
(A)
4 slices Cheddar cheese
80g butter
125g milk
(B)
3 eggs
100g caster sugar
(C)
210g self raising flour
Method:
1. Melt (A).
2. Mix (B) until there's bubbles.
3. Mix (A) and (B) together and slowly add in (C).
4. Scoop 1/3 of the mixture out and add in cocoa powder. (Skip this step if you want original flavour only).
5. Pour (4) into mould first then add the original mixture on top.
6. Steam for 15 mins on high heat.

Lollipop Pancakes by Fiona Low
Ingredients:
1 1/4 plain flour (135g)
1 1/2 tsp double acting baking powder
1 cup milk
2 tbsp castor sugar
1 tbsp oil
2 large eggs (separated)
pinch of salt
Method:
1. Sieve flour and baking powder.
2. Mix egg yolks, sugar and milk.
3. Stir in oil.
4. Beat all dry ingredients and wet ingredients to form batter.
5. Whisk egg whites with salt till soft peaks.
6. Fold batter and egg whites together.
7. Pour batter onto pan and put the stick in, when it become bubbly on the top, flip it together with the lollipop stick (can be bought from bakery shops).
Kimbap by Yvonne Shee
Ingredients:
Korean ham (used sausage in this kimbap)
Picked radish
Imitation crab meat
Seaweed (can buy from korean mart, it's all set for 10 roll)
Carrots cut into match sticks
Cucumber
Egg (about 5 eggs)
Spinach
Method:
1) Prepare rice (can use jasmine rice) soak before use.
2) Whisk egg with a little salt and fry.
3) Blanch spinach, rinse with cold water for 3 times, squeeze dry and add soya sauce and sesame oil
4) Fry the ham and crab meat with little bit of oil.
5) Stir fry carrots with a little salt for 1/2 min.
6) Cut the egg and cucumber long.
7) Mix rice with salt, sesame oil and sesame seeds
8) Roll and cut

Char Koay Kak (Fried Rice Cake) by Kavitha Soraya Kandasamy
Ingredients:
320g Rice Flour
3 tbsp tapioca Flour
salt to taste
3 cups water
2 medium sized of White Carrot grated and squeeze out the water
1 cup radish water (white carrot)
1 tbsp light soya sauce
3 cloves garlic chopped
1 tbsp sesame oil
Method:
1. Mix rice flour, tapioca flour, salt and soya sauce with the 3 cups of water and 1 cup of white carrot water.
2. Fry garlic till light brown and add the grated white carrot that was squeezed out. Fry for about 5 mins and then mix with the flour mixture. Mix til it is a bit thick and then pour it onto a plate.
3. Steam it for 20 - 30 mins. PLEASE cool it well before cutting
1 tbsp Fish Sauce
1/2 tbsp Dark Soya Sauce
1/2 tsp Sugar
1/2 tsp Light Soya Sauce
1 tsp shallot
Method:
Fry chopped garlic, then add dried salted radish (choy poh). Then add the cubed cakes and fry for a bit. Add chili paste (dried chilli,onion and garlic blanded) and sauce ingredients. Stir fry for a bit then break an egg in the middle and stir fry again. Add kucai and last bit add bean sprouts and serve hot.

Homemade Peanut Butter by Celine Lim
Ingredients:
500gm peanuts (roast till fragrant)
To taste :- sea salt, manuka honey and virgin coconut oil (VCO)
Method:
1. Put in roasted peanuts into food processor with a pinch of sea salt.
2. Blend till powdery, stop and use a spoon to clean off the sides. Blend again.
3. As it blend after 1-2 minutes, add in vco through the funnel. Stop and scrap the sides, then add honey. Blend till creamy. Add more honey or sugar and blend if you find the peanut butter taste bland.
4. I put aside 50g of roasted nuts and put in at the last minute because we love crunchy peanut butter!
Tip - it will get lumpy as it blend, like a ball. Just stop and press it down with spoon and blend again!!

Pumpkin Jam by Mummy Love Jayna
Ingredients:
Japan pumpkin 1/2 of medium size
Pandan leaves 6-7
Molasses 1tspn (you can add more if you like it sweeter)
Virgin coconut oil (vco) 1-2 tbspn
Method:
1. I steam pumpkin for 15 min using Avent steamer. Discard excess water. Blend till smooth.
2. Cook in slow fire together with pandan leaves and molasses. Cook till the paste thicken (about 15-20 min).
3. Discard pandan leaves. Remove from fire.
4. Stir in vco until well combined.
This can make one small tub. You can double the recipe if you would like to make more.
