Pork with Potato by Jaimy Chan


Method:
1. Stir fry shallots and garlic. Add about 1 tbsp brown sugar, add about 1 tbsp fermented bean sauce (tau chiu).
2. Add meat (soft bone pork ribs or chicken) and stir fry for a while then add 1 tbsp of low sodium light soya sauce, 1/2 tbsp of dark soya sauce, some pepper then about 1 cup of water and potato. 
3. Bring to boil then simmer for 1 hour. If too watery, take out some gravy let it cool down then mix with corn starch then pour and mix into the dish.
