Kuih Puteri Ayu by Harpreet Kaur
Ingredients A
* 2 eggs
* 3/4 cup sugar
* 1/2 tbs ovalette
* 1/2 tsp vanilla essence + green food colouring ( adjust accordingly ) OR freshly squeeze pandan juice ( you can mix with a bit of the santan / fresh milk to get the pandan juice ) OR ready made pandan flavour ( adjust accordingly )
* 1 cup santan / fresh milk
* 2 cups self raising flour
Beat the eggs + sugar + ovallete until soft and creamy. Mix in the vanilla essence / pandan juice and santan / milk. Mix well. Lastly put the self raising flour and mix until well combined.
Ingredients B
* Grated coconut
* Pinch of salt
* Tapioca starch ( agak agak, just a bit )
Mix ingredients B and put a little bit inside the mold and press firmly than put the mixture A and steam for about 12 - 15 mins.
