CNY Cup cakes by Eva Wong
Make 12 cupcakes
Ingredients:
110g butter, softened
110g caster sugar
110g plain flour
2 tsp baking powder
¼ tsp salt
2 medium eggs
1 tsp vanilla extract
Method:
1. Preheat the oven to 180C/ 350F. Line a muffin tin with paper cases.
2. Put the butter and sugar in a bowl and beat until pale and fluffy.
3. Sift the flour, baking powder and salt into the bowl.
4. Beat the eggs (1 by 1), vanilla and add to the bowl. Beat until just combined.
5. Spoon the mixture into the paper cases.
6. Sprinkle some choco chips/stars (for deco).
7. Bake for 18 to 20 minutes until risen, golden and firm to the touch.
8. Cool in the tin for 10 minutes, ready to serve.
