Bread Pudding by Chin Pei Ng
Ingredients:
2 wholemeal buns (you could use any type of bread that is equivalent)
100ml milk
10g whipping cream
2 eggs, beaten
cheddar cheese
Mozzarella cheese
Salt and pepper, to taste
Cranberry
Mix seeds
Method:
1. Lightly coat your bakeware with olive oil or butter.
2. Cut the bread into cube.
3. Mix the bread, cranberry and shredded cheese (cheddar & mozzarella)
4. Heat the milk in a pan until hot but not quite boiling. Pour the milk over to the eggs, whisking as you pour.
5. Add in whipping cream and season with salt and pepper, then pour the custard mixture over your bread and leave to soak for 10mins
6. Sprinkle mix seeds on top, bake in a pre-heated oven at 170°C for around 25 minutes until your cheese is golden and bubbly and the custard is set.
* Different type of bread may caused the bread pudding to be too wet/dry. Thus as you pour the custard mixture over to the bread, pour slowly and see if you need more or less. The ideal would be bread just soak wet in the custard mixture, not flooded ...lol...don't know how to describe!
* Also, I simply add in cranberry, cheese without weighing, can't provide actual weight I used for this.
