Baked Sutchi Fish with Assorted Greens by Mary Koh

Method:
1) season fish (10 fillets) with 1 1/2 tsp salt, 8-10 dashes of pepper, half a lemon, 1 tbsp of corn flour & unsalted butter for at least 2 hrs.
2) greens - cut to size as required - onion, spring onion, garlic, cherry tomato, bi-color corn & lettuce
3) grease tray with butter, cover with lettuces, sprinkle garlic & onion 
4) place fish
5) place brussel sprouts, cherry tomato, spring onion & corn on top
6) drop some butter as desired 
7) Put into preheated oven at 180℃, 30-45 min as desired (or until cooked)

Served with rice : white, brown & hull millet grain & pandan leaves. Crack some fresh black pepper on top.
