Soy Milk Macaroni by Bliss Tan Lih Ling

Ingredients:
150g rinsed and drained macaroni
100g diced king oyster mushroom
750-800ml unsweetened soy milk
25g peeled and bruised ginger
1 tbsp olive oil
salt and ground black pepper
25g finely chopped coriander leaves

Method:
1. Throw in the macaroni, mushroom, ginger, soy milk and olive oil in a pot.
2. Bring to boil and simmer for 15 mins until the macaroni is softened. Remember to stir occasionally.
3. Season with salt and ground black pepper. Mix in the coriander.
