Banana & Poppy Seed Loaf by Janice Goh
Ingredients:
100g unsalted butter
50g brown sugar (Original 125g)
2 eggs
140g self raising flour
1tsp baking powder
3 medium ripe bananas, mashed
1tbsp poppy seed
40g virgin coconut oil
Method:
1. Preheat the oven to 180C. Grease a 8” loaf pan.
2. Using an electrical whisk, cream the butter & sugar until light & fluffy, the slowly add eggs, one at a time.
3. Sift the flour & baking powder into a bowl & fold into the butter sugar mixture. Add the mashed bananas, poppy seed & VCO and mix well.
4. Pour into the tin, level the top with a spatula.
5. Bake 50-60 minutes until a skewer come out clean. Cool in the tin for 10min, then remove to a wire rack. Serve warm.
