Braised Chicken with Mushroom, Chestnut, Carrot & Potato by Angela Ng

Ingredients:
4 drumsticks chopped into two
2 slices ginger
2 carrots
3 potatoes
5 dried Chinese mushroom (soaked)
Half canned chestnut
one tbsp oyster sauce
one tsp sesame oil
one tbsp kicap manis
one tbsp sugar
Enough water to cover your drumsticks (I like to reserve the water which I used to soak the mushroom for cooking. I will always rinse mushroom a few times before soaking it)

Method:
1) Heat 2-3 tbsp olive oil. Put in ginger and fry till golden brown. Put in drumsticks. Stir constantly for about 5 mins.
2) Put in carrots, potatoes, mushrooms and chestnut. Stir constantly for about 5-10 mins.
3) Pour in water enough to cover the dish. Bring to boil. Then add oyster sauce, sesame oil, kicap manis. Stir to mix. Simmer for 30-45 mins.
4) For the last 2 mins stir in sugar. If you think it's already to your liking, you can omit sugar.
Note: do taste a few times as you go to get your taste.
