Steam Chicken with Ginger & Apple Corn Chicken Soup by Su Yi

Stir Fried Celery & Squid

Steamed Chicken with Ginger
1. Marinate chicken with rice wine, oyster sauce, soy sauce, sesame oil & pepper for at least 30 mins.
2. Fry garlic & ginger till fragrant, set aside in a bowl with the oil.
3. Put chicken in the remaining oil and just stir fry for 3-4 mins.
4. Put chicken on a plate (preferably wide and deep plate as it will be soupy after steaming) and proceed to steam for 25 mins. 
5. 5 minutes before turning of gas, pour in garlic & ginger If you love ginger, can put more raw ginger to be steamed together. If you like something different, fry salted fish with the garlic & ginger.

Apple Corn Chicken Soup
-Approx 100gm chicken - 1 drumstick, 2 wings
-1 corn
-1 Fuji apple
-4 red dates
-1 XL scallop
Boil for 1.5 hours.
