Fish Pie by Janet Teh
Adapted from Annabel Karmel's recipe
Ingredients:
Mashed potatoes:
500gm potatoes, peeled and cut into large pieces
1/4 cup milk
3 tbs of butter
a little salt and pepper
Fish pie:
Some butter / cooking oil
1 onion, finely chopped
2 tomatoes, seeded and finely chopped (you may skin it also)
1 1/2 tbs all purpose flour
1 cup milk
250gm salmon fillets, skinned and cut into fairly large cubes
250gm cod or threadfin or any white fish fillets, skinned and cut into fairly large cubes
1 tablespoon parsley, chopped (I didn't have this)
1 bay leaf (I didn't have this either)
1/2 cup Cheddar cheese, grated
1 egg, lightly beaten
a little salt and pepper
Method:
1. Cook potatoes until tender, strain and mash with 1/4 cup milk, 3 tbs of butter and season to taste.
2. Melt butter or heat up cooking oil and saute the onion for 3 minutes.
3. Add the chopped tomatoes and saute for 2-3 minutes.
4. Stir in the flour and cook for 1 minute.
5. Add 1 cup milk and bring to boil.
6. Stir in the salmon, cod, parsley, bay leaf and simmer for 3-4 minutes.
7. Remove the bay leaf.
8. Stir in the grated Cheddar cheese until melted.
9. Season to taste.
10. Preheat oven to 180C.
11. Put fish into a baking tray and top with the mashed potato.
12. Brush the potato with the lightly beaten egg.
13. Bake in the oven for 15-20 minutes.
14. Optional - Brown under a broiler for a few minutes.
