Carrot & Apple Steam Muffins by Janice Goh



































Ingredients:
200g self raising flour or all purpose flour
100g Carrot + Apple, steam and mashed
50g Brown Sugar (may replace with 50g apple, steam & mashed)
30g VCO (may replace with olive oil or grapeseed oil)
2 Eggs
2 1/2tsp Baking powder
A pinch of salt
100g Milk

Method:
1. Preheat the steamer.
2. In a large bowl, mix together sifted flour, baking powder & salt. Set aside.
3. Beat the eggs + sugar until foamy.
4. Add in VCO, Milk & Mashed carrot + apple continue beating until mix well.
5. Add dry ingredient and mixed well.
6. Fill muffin batter into a cupcake liner about 80% full.
7. Steam for 15min.
