Banana Raisin Cake by Vivi Yong


Ingredients:
100g unsalted butter
50g brown sugar
2 eggs
140g self raising flour
1tsp baking powder
3 medium ripe bananas, mashed
40g virgin coconut oil
Raisin as you like

Method:
1. Preheat the oven to 190C. Grease a loaf pan.
2. Using an electrical whisk, cream the butter & sugar until ligh t& fluffy, then slowly add eggs, one at a time.
3. Sift the flour & baking powder and fold into the butter sugar mixture. Add the mashed bananas, VCO and mix well. Add in the raisin & stir awhile.
4. Pour into the tin, level the top with a spatula.
5. Bake 50-60 minutes until a skewer come out clean. Cool in the tin for 10 mins, then remove to a wire rack. Serve warm.
