Steam Marie Biscuit Cake with Choc Chips by Adrinne Chuah
Ingredients:
150g softened unsalted butter
120g castor sugar
3 large eggs
150g original Marie biscuits, crushed and processed into powder form
1/4 tsp baking powder
1/4 tsp salt
cocoa powder (I replace with 3 handfuls of semi sweet chocolate chips)
Method:
1. Grease square 18cm square pan, bottom and sides.
2. In a mixing bowl, beat sugar and butter till pale, light and fluffy (high speed)
3. Reduce to low speed, add in eggs one at a time till well incorporated.
4. Add in salt, baking powder and Marie biscuits, mix well.
5. Fold in chocolate chips till evenly distributed.
6. Pour batter into prepared pan and steam on medium low heat for 10 mins.
7. Reduce the fire to very low heat and continue to steam for another 30 mins.
