Sugar Butter Buns by Doreen Chin


Ingredients:
Bread flour 260g
Low protein flour 115g
milk 150g
Yeast half tsp
Sugar 1 tbsp
Honey 1 tbsp
Egg one PC
Salt half tsp
25g butter
Butter cubes and sugar for topping

Method:
1. Mix all ingredients except butter and use mixer until smooth dough is formed. 
2. Add butter, continue kneading by mixer or hand. 
3. Cover the dough with wet cloth and proof for 1 hour or become double in size. 
4. Divide the dough to 8 or 12 pcs and make into round shape. Rest for 15 mins. 
5. Make the shape and proof for another 1 hour. 
6. Preheat the oven at 170C. 
7. Poke a hole/ 4 holes on the bun and insert the butter cube and pour some sugar on it.
8. Bake at 170C for 12-15 mins or until turn golden.

Note:
Proofing method - cover with wet cloth and put in oven with a glass of hot water for 45 to 60 mins. Don't switch on oven. You may change hot water twice during this process.
