Banana Walnut Cake by Wei Ling Tan


Ingredients A
2 cups flour
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
50gm chopped walnut (reserve some for decoration)

Ingredients B
1/2 cup applesauce
1/2 cup honey (original recipe is 3/4 cup)
50 ml milk & 1 tbsp yogurt (can omit if don't have)
2 eggs beaten
2 mashed bananas * must use RIPE ones
1/2 cup oil (original recipe didn't add oil)

Method:
1. Preheat oven at 180'c.
2. Mix & Sift Ingredients A and set aside (if you dun have much time in the morning, you can prepare this the night before & put into fridge)
3. Combine well ingredients B.
4. Pour B into A & stir until just combine * DO NOT OVERMIX, if you see a bit of flour, it's fine.
5. Transfer batter into a baking mold.
6. Sprinkle some chopped walnut over the surface of batter.
7. Bake in preheat oven for 50 to 60 minutes.
