Danish Butter Cookies by Doreen Chin
Ingredients (A)
Butter 250g
Sugar 120g
a pinch of salt
Ingredients (B)
One whole egg
1tsp vanilla essence
1tsp lemon juice
Ingredients (C) - Sifted
40g milk powder
60g corn flr
Plain flour 320g
1/2 tsp baking soda
Method:
1. Preheat oven at 170C
2. Thaw butter to room temperature, softened.
3. Place all ingredients (A) in a mixer with a paddle attachment and beat till fluffy, mix (B) evenly at low speed. Do not over mix. Then follow by (C).
4. Pipe soft cookie dough on a lined tray.
5. Bake in a preheated oven for 15 mins or till golden brown.
6. Leave to cool and store in airtight container.
