Roasted Black Pepper Chicken and Baby Mediterranean Rice by Yvonne Shee

Chicken:-
Ingredients:
Marinade for 6 drumsticks with thigh:
half cup soya sauce,
2 tbsp brown sugar
1 tbsp honey
2 tbsp freshly ground black pepper
2 tbsp minced garlic

Method:
1. Marinade for 6 hours or preferably 24 hours (turn it over halfway marinating)
2. Bake at preheated oven at 200 degree C for 25 mins.


Rice:-
Ingredients:
2 cloves garlic
half onion
One cup of rice
3 button mushrooms
3 cups of water/chicken stock (as much as needed)
pinch of salt and pepper

Method:
1. Saute the garlic till fragrant, add in onions and saute till translucent.
2. Add in mushroom and carrots and stir till brown but not burned.
3. Add in rice and chicken stock. Add salt and pepper to taste. Stir occasionally to avoid burning and add stock when necessary. You can stir fry it and cook using rice cooker.
